The Best Sourdough Oatmeal Chocolate Chip Cookies

If you are familiar with my little family, you know that we love a good book. Perhaps it’s the power of suggestion, but a recent read aloud book has my little guy requesting chocolate chip cookies. I could blame the mouse, but I too love a good chocolate chip cookie. So, if you can’t beat ‘em join ‘em! I decided to make a batch of delicious chewy cookies with a sourdough twist.

Chocolate chip cookies are one of my favorite easy desserts. Perfect for an afternoon snack or to bring to a gathering of precious friends, chocolate chip cookies are always a crowd favorite. Not to mention, they are a great sweet treat for little hands to hold. I wanted to see if it was possible to create a chocolate chip cookie recipe that encompassed the benefits of sourdough, so I thought I would create my own sourdough discard cookie recipe.

The concept of putting sourdough into dessert recipes or baked goods might seem a little strange, but the truth is, you can hardly tell the difference! Incorporating sourdough into sweet treats gives you the gut benefits that sourdough has to offer. Active sourdough recipes can also be a little bit finicky, but sourdough discard recipes like this one are easy as pie..or easy as cookies? Ingredients:

-1 cup (2 sticks) room temperature unsalted butter (melted butter works too)

-2 whole eggs

-1 1/2 cups quick oats (old fashioned rolled oats will also work)

-1/4 cup sourdough starter discard

-1 3/4 cups all purpose flour

-1 teaspoon sea salt or kosher salt 

-a pinch of cinnamon 

-3/4 cup cane sugar (white sugar) 

-1 cup light brown sugar

-2 teaspoons pure vanilla extract

-1 1/2 cups semi sweet chocolate chips or dark chocolate chips

-1 teaspoon baking powder

Kitchen Tools:

-Cookie Sheet

-Large mixing bowl

-Cookie scoop (optional)

-Parchment paper

-wooden spoon

-wire rack (optional)

-stand mixer (optional) with paddle attachment or hand mixer.

Preparing the Baking Sheet and Oven

Before we begin mixing our cookie dough, let’s prepare our kitchen. Preheat your oven to 350 degrees Fahrenheit. Grab your baking sheet and line with parchment paper. Set your prepared baking sheet aside. If you are using a wire rack to cool your cookies, place your wire rack out on the counter so that it is ready to use!

Mixing The Dough

After we have prepared our baking sheets and preheated the oven, it is time to mix up the cookie dough! For best results, we will mix our wet ingredients and our dry ingredients separately.  Attach your paddle attachment to your stand mixer. If you are using a hand mixer and a large bowl, that will work absolutely fine as well! You can even hand mix this cookie dough, although it will take a little more arm strength and effort. In your stand mixer bowl, cream your unsalted butter, brown sugar, and cane sugar together on a medium speed. You want your butter and sugar mixture to be well combined and fluffy. This may take between 2-4 minutes. Then add two whole eggs, one by one, until well beaten. Pour in your 2 teaspoons of vanilla extract and mix again. Once everything is well combined, set aside your wet ingredients.

Now it is time to mix the dry ingredients. In a separate bowl, combine your 2 cups of all purpose flour, 1 teaspoon of sea salt, 1 teaspoon baking powder, a hint of cinnamon, and 1 1/2 cups of rolled or old fashioned oats. I love to add that hint of cinnamon to the dough to add a warmer, nutty flavor. It really adds an extra layer to these delicious cookies. Mix until well combined.  Turn your stand mixer and incorporate your dry ingredients into your wet ingredients, adding a little at a time to avoid a floury mess. Once your dough is well incorporated, it is time to stir in the chocolate chips! Fold in the chips slowly and evenly.

Baking the Cookies

Now it is time to bake our sourdough oatmeal chocolate chip cookies! Using a cookie scoop or a plain ol’ spoon, scoop your cookie dough onto your parchment-lined baking sheet. Try to keep your dough balls evenly sized and spaced an inch or two apart so that they don’t form one giant super cookie. Place your baking sheet in your preheated oven and bake for 10-12 minutes or until golden brown. You may need to eyeball them for a few extra minutes if you like crispier cookies. I, personally, like a soft, chewy cookie so I lean towards them being almost under-done. When the cookies are baked to perfection, remove your baking sheet from the oven. Using a cookie spatula, scoop your cookies off the parchment paper and place on your wire rack to fully cool. 

Store in a cake dome on your table or in an airtight container. This recipe makes around 2 dozen so you could freeze half of the batch for later in a freezer-safe bag or gift to a friend. They make a great snack for a summer picnic. Take them to a 4th of July potluck or bring them to a friend who just needs a pick-me-up. This recipe makes a lot of cookies, so it is perfect to share or save. Lately, I have been baking up large batches of breakfast or baked goodies to have on hand in my freezer in case my toddler has a hankering for something special.
